It's time to toot my own horn.

You better be because here it comes, people...
Yesterday I made the most delicious chopped salad for our office holiday lunch.
No joke.
Another perk, it was super duper easy to make.
Win win.
Because I'm in the giving mood, and because I needed something to write about today, I'm sharing the recipe with all of you fine people.

I have always loved Claim Jumper's Citrus Salad, but haven't lived near a Claim Jumper in years.  I tried to think of all the things I loved about that salad and made up my own version with a cranberry twist for the holidays.

Cranberry Citrus Chopped Salad
(makes 12 cups but the recipe is easily halved or multiplied)

1 head of iceberg lettuce, chopped
1 head of romaine lettuce, chopped
1/2 purple onion, diced
1/2 cup dried cranberries
1 small can mandarin oranges, WELL drained (reserve part of the juice)
1 Granny Smith apple, chopped
1 avocado, chopped
2 oz. crumbled blue cheese
1/2 cup candied pecan pieces
1 bottle cranberry balsamic dressing

Directions:  Pour out part of the dressing, added in some of the juice from the oranges to the bottle and shook it well to give the dressing more of a citrus twist.  Here's the hard part, put all the ingredients in a large bowl and mix it up.  Seriously, that's it!  

Tips:  If you can't find cranberry balsamic in your grocery store, you can use any type of fruity dressing on this salad as a substitute.  Also, I got my dried cranberries from the bulk food section instead of buying a big bag by the raisins and I saved about $3.

I will certainly be taking this to the Christmas dinner next week.
