Since today marks no special occasion at all, I thought I would try and make it randomly special with a little cake.
Get it?
(A cupcake is a little cake!)
I kill myself sometimes.
So, I thought I would feature Miss Kimmy again today with her recipe for carrot cake cupcakes.
Doesn't that look amazing?!!

Do you all remember Kimmy? 
She's the creative gal that did the mint plates I featured last month.  
Get used to her because she's agreed to share more of her recipes and projects via features.  
Get excited!

For reals, you guys, I cannot tell you how much I'd love to live near Kimmy.  She bakes on the daily.  
She's hilarious.  She'd be a blast to go out with.  
Hell, we even have a bucket list item to get kicked out of Disney World one day.  
It. Will. Happen.

Without further delay, here's Kimmy's version of her recipe for Super moist YUMMY Carrot Coconut Cupcakes with Cream Cheese frosting!

Pre-heat oven to 350 degrees.

In a mixing bowl combine:
1 3/4 C Granulated Sugar
2/3 C Vegetable Oil
4 Tbsp Orange Juice
1 1/2 tsp Vanilla Extract
3 Large Eggs

In a separate bowl combine:
2 C All-Purpose Flour
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Ground All Spice
1 tsp Salt
3 C Shredded Carrots
3/4 C Chopped Walnuts
1/4 C plus 2 Tbsp Shredded Coconut

Add the dry ingredients to the wet ingredients until combined well. Poor into well greased or papered cupcake molds. Bake for 20-25 mins until toothpick comes out clean.
Allow to completely cool before frosting with....

Cream together:
8 oz of Cream Cheese at room temperature
3/4 C Confectioners Sugar
1/2 tsp Vanilla

Apply to cupcakes and cover with sprinkled coconut. ENJOY!

Few things on earth are as yummy as the combination of carrot cake and cream cheese frosting.  I can't wait to give these a try.  
I also can't wait to see what Kimmy opts to share with us next!
